Skin-loving red cabbage soup

This soup recipe is a powerhouse of incredible anti-inflammatory skin loving antioxidants from the red cabbage which is also is a rich source of vitamin C!

This DELICIOUS purple soup is literally a powerhouse of incredible anti-inflammatory skin loving antioxidants from the red cabbage which is also is a rich source of vitamin C (red cabbage has double the amount of vitamin C than green!) This was my third attempt to make this red cabbage soup recipe the others were a bit meh but this version has an amazing kick to it and the creaminess of the coconut milk really makes it! I’ve challenged myself to create a new soup recipe every week 😅and this is definitely one of my faves! 

INGREDIENTS to make 4 bowls

1 large red cabbage 

2  red onion 

1 potato 

2 leeks

1 400ml tin of coconut milk (reserve the cream on top to stir into your soup when you serve it) 

500ml vegetable stock

2 tbsp of medium curry powder 

1 tbsp of mild chilli powder 

METHOD 

1. Chop all of the ingredients and to sauté in a pan on medium heat

2. Pour in the vegetable stock and bring to a boil 

3. Let it reduce down before adding coconut milk 

4. Leave to bubble away on a low- medium heat 

5. Pour into a blender and whizz up for a minute and serve! 


Can be kept in the fridge for a few days and freezes really well too! I froze most of my batch to have when I can’t be bothered to cook but want something nutritious and warming to eat
